Vegetables are tastier and more fun to eat when they’re cubed and covered in delicious spices. Case in point? These vibrant sweet potato cubes.
Sweet potatoes: One serving provide about 7 grams, or 26% DV, of fiber, supporting healthy digestion and elimination. They can also help keep acne at bay, thanks to the super high Vitamin A content.
Turmeric is a bright yellow spice that’s shown antiviral, antibacterial, anti-inflammatory, and anticancer properties in various studies. In fact, it may be one of the most studied spices, with over 1,000 research studies on its effects, and counting.
Spiced Sweet Potato Cubes
1 sweet potato (15 oz or 425 g), chopped small into 1 cm cubes
1 tsp. avocado oil or olive oil
¼ tsp. turmeric powder
¼ tsp. garlic powder
¼ tsp. cayenne powder
¼ tsp. paprika
¼ tsp. salt
¼ tsp. black pepper
Preheat oven to 425 degrees Fahrenheit (218 degrees Celsius).
Line a baking sheet with parchment paper.
In a bowl, toss the sweet potato cubes with the oil and spices. Lay out on the baking sheet in a flat layer. Roast for 30 minutes until cubes are just starting to brown.
