Benefits of Flavorful French Lentils

Lentils are a great source of magnesium and folate, which help to improve heart health. They are also great for digestion and weight loss.

Carrots, which are both low in calories and high in fiber, support eye and skin health. You can thank the Vitamin A and the carotenoids carrots contain.

Onions pack some nutritional powerhouses, especially quercetin, a phytonutrient noted for its antibacterial, antiviral, and anticancer properties.

Flavorful French Lentils


1 Tbsp. avocado oil or olive oil

¼ cup (40 g) onion, diced

1 clove garlic, diced

1 carrot, diced

1 cup (200 g) lentils

½ tsp. dried thyme

2 ¼ cups water

¼ lemon wedge

salt, to taste


In a medium stock pot over medium heat, add the oil, onion, garlic, and carrot. Cook for about 7 minutes, until fragrant. Then, add the lentils, thyme, and water. Bring to a boil, then cook over medium low for about 25 minutes, or until all water is absorbed. (You can drain off excess water if needed). Squeeze fresh lemon juice over the lentils and season with salt to taste.
