Chocolate truffles sure sound fancy, but this recipe takes less than 5 minutes to make and is the perfect guilt-free Valentine’s Day gift.

Store-bought truffles are often loaded with dairy and sugar, but these truffles only utilize three ingredients: cocoa, dates, and coconut. There’s no refined sugar in these truffles, and the dates provide  fiber, so you won’t feel as tempted to eat the whole batch as you would with truffles made of refined ingredients.

Chocolate Truffles

(Yields 20)

Time: 5 min




3 tbs. cacao powder

1 1/2 cups pitted dates

3 tbs. unsweetened shredded coconut


Cacao Nibs

Cacao Powder

Sesame Seeds

Shredded Coconut

Crushed Pistachios

Crushed Walnuts

Acai Powder

Goji Powder

Maqui Powder

Pomegranate Powder



  1. Add cacao powder, dates, and coconut to a blender. (A bullet blender, works well here). Blend until a paste is formed, should only take a few seconds.
  2. Roll about a tablespoon or so of paste into a ball. Repeat.
  3. Choose a topping, sprinkle it onto parchment paper, and roll date ball in it to coat.
