Many people think that veggies are boring or bland, but the key to actually enjoying healthy food is how you make it! If you prepare and cook veggies right, it makes a world of a difference. Roasted cauliflower is a prime example.

This roasted cauliflower focuses on three factors to make it crave-able: temperature, time, and almond flour, which adds a delicious bit of texture and healthy fats.

Here’s how to make the best roasted cauliflower ever:

Roasted Cauliflower

(serves 4)

Prep Time: 5 min

Cook Time: 50 min

Total Time: 55 min

Ingredients:

1 head of cauliflower, chopped into evenly sized florets

1-2 Tbsp. olive oil

pink or celtic salt

black pepper

1-2 Tbsp. almond flour

Instructions:
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Lay out cauliflower on a large baking sheet. Drizzle with olive oil and season with salt and pepper. Use your hands to toss and coat all of the pieces well, then spread them out on the sheet.
  3. Roast for 35-40 minutes, tossing halfway through. They should be soft and just starting to brown. Remove from the oven, sprinkle generously with the almond flour and use tongs or utensils to toss to coat. Return to the oven for 10 minutes longer. To serve, taste and add additional salt and pepper as needed.
