This simple sauteed shiitake mushroom recipe is delicious, and makes for a quick yet flavorful side dish.
Shiitake Mushrooms are noted for promoting cardiovascular and immune health, and they are also a good source of iron and B vitamins.
2 tsp. avocado or olive oil
12 oz shiitake mushrooms, stems removed and caps sliced thin
1/2 cup onion, diced
1 tsp. dried thyme (optional)
1/4 tsp. salt, or to taste
In a pan over medium heat, heat the oil, then add the mushrooms, onions, and thyme. Saute about 7 minutes, stirring occasionally and adding water if needed to avoid sticking, until mushrooms are soft. Transfer the mushrooms to a bowl.
