I love hummus, but it’s nice to switch it up sometimes! Try my zucchini hummus, bean free for a change. Serve soon after making with crackers, my Chickpea Flatbreads, or as an alternative to guacamole or sour cream on Mexican night.
Zucchini Hummus
Ingredients:
- 1 medium zucchini, chopped
- 1 clove of garlic
- 2 T raw tahini
- 2 T lemon juice
- 1 t sea salt
- ½ t cumin
- Pinch of cayenne
Preparation:
- Mix all ingredients in a high-powered blender or food processor until smooth.
- Variations: Add cilantro and use lime juice instead of lemon.
