I love hummus, but it’s nice to switch it up sometimes! Try my zucchini hummus, bean free for a change. Serve soon after making with crackers, my Chickpea Flatbreads, or as an alternative to guacamole or sour cream on Mexican night.

Zucchini Hummus

Ingredients:

  • 1 medium zucchini, chopped
  • 1 clove of garlic
  • 2 T raw tahini
  • 2 T lemon juice
  • 1 t sea salt
  • ½ t cumin
  • Pinch of cayenne

Preparation:

  1. Mix all ingredients in a high-powered blender or food processor until smooth.
  2. Variations: Add cilantro and use lime juice instead of lemon.
