Yield 4 side dishes
2 pints grape or cherry tomatoes, sliced in half
2 cloves garlic, chopped
1/4 tsp. salt
1/2 tsp. dried thyme (optional)
Preheat oven to 400 degrees Fahrenheit.
Line a baking sheet with parchment paper. Lay out the tomatoes in a flat layer. Top evenly with garlic, salt, and thyme. Roast in the oven for 33-35 minutes, flipping or stirring the tomatoes about halfway through.
Serve as a side dish or on top of salads.
