These little gems are a wonderful snack to take on road trips, parties and even make tasty little croutons on salads. Crunchy and delicious! Play around with the seasoning mixture until you find the combination that sings to you.
Crunchy Roasted Chickpeas
- 3 c chickpeas, soaked and cooked
- 2 T coconut oil melted
- 1 T tamari
- 1 t cumin
- 1 t chili powder
- ½ t paprika
- ½ t cayenne or Longevity Superfood Hot Sauce
- Preheat oven to 400.
- Toss all ingredients together and then spread out on a baking sheet lined with parchment paper.
- Roast on the middle rack, flipping a few times for 40-45 minutes or until they brown. You may find that they are still chewy inside, if this is the case, pop them back in the oven, but turn it off and let it coast. This will dry them out without burning and will make them crispier!
